Food Grade Cal (hydrated lime) or, calcium hydroxide has many uses. We sell them here to cure the clay comales we sell. Cal is also used to process corn to make tortillas, tamales and pozole.
Use
Mexican Cal is used to cure a comal. You can see the process in the video to the right. To season or cure a comal, it over low heat and slowly bring it up to temperature. Prepare a watery mixture of Mexican Cal and water and spread a thin layer of the mixture over the entire surface of the comal using a dry towel or brush. Heat it until the lime mixture dries and hardens. Once cool, rinse the comal, and repeat the process. The comal is now ready for use.
